The soil of our beautiful Provence offers us aromatic plants rich in flavors. The most evocative of these is certainly lavender. Here at A L'Olivier, we have decided to use it as a cooking ingredient. After infusion, Lavender transfers its floral notes to the vinegar. It combines ideally with olive oil to create the most Provencal of vinaigrette. We also recommend using it to deglaze oven-roasted rack of lamb or loin of cod with Provencal herbs.
