The Campanini family, now in its third generation, supplies some of the best restaurants in northern Italy with its naturally-grown rice from Veneto and Lombardia. Custom-milled and produced in small lots, traditional varieties of rice produced by Campanini absorb liquid and flavor while maintaining a firm texture and pure flavor. Referred to in northern Italy as the caviar of rice, Carnaroli is the highest quality of superfino, superfine rice. This is one of the hardest varieties to grow, but what small yields are produced are prized for their high starch content and long grain, perfect for cold rice dishes like rice salad or pilaf, and lighter, fish or vegetable-based risotto.
