One of the main reasons you have probably not heard about this oil it is that it is made in very limited quantities. The trees (about 9,000 of them) are very low yielding (only about 1 liter per tree), so the over-all production is low. They only produced 225 cs of oil this year. The oil is made with the following percentages of grapes/varietals....50% Correggiolo, 40% Moraiolo, 5% Leccino and 5% Frantoio, pressed on the estate with Pieralisi cold-extraction centrifuge. All of the olives are harvested by hand and are pressed within hours of being picked. Won "Best Intense Fruity Oil", 2011 Flos Olei.
This is an extremely high quality, hard to find oil...produced at an estate that is also making very high quality DOP Chianti Classico wine.
