A fine funky agent.

Like any Brie worth its salt it's unremarkable at room temperature--and useless cold. But cubed small and fed into a simmering pan of farfalle, olives and tomatoes, it releases such a dank, assertive air that you'd never guess it was the same cheese.
Warmed through, whether for a cheese course or added into a dish as it cooks, it delivers strong on fungal piquancy and savory flavor. A handy additive for pastas and risottos!
