Description
The classic historical format of Pecorino Romano, a cylinder of 34.000 kg (variable weight) of exquisite goodness strictly PDO
finish is typical of ancient Rome that still sets it apart: its distinctive black bark, the "cappatura" as commonly is defined, introduced centuries ago to protect the form from the weather, now only a symbol of the Roman tradition.
The Collection of milk
The raw material of Pecorino Romano from the careful selection of the herds that graze on the rich fields of the Roman, from October to June, with full respect for the natural cycle and the needs of the animal. These flocks carefully selected to ensure high organoleptic characteristics of milk then undergoes processing and transformation, because the final yield of cheese and its properties depend primarily on the type of feeding the sheep.
As the old adage: " The sheep makes what you eat! "
The Curing
Just as centuries ago, salting of cheese is only "dry", or manually with sea salt, and not, as in many other situations, pickled by immersion in saline.
It is made by hand, by applying a kind of "massage" the form in the months of ripening and involves the use of specialist staff dedicated to "spoil" the Pecorino Romano, who has a special and pleasant spicy flavor, without being too salty to taste.
The Seasoning
As was wisely sensed by the founder of the Group, Remo Brunelli, maturing "natural" inevitably spills on the quality of the final product. For this reason, the Group Brunelli abolished the cold storage of maturation, preferring a slow and delicate maturing within the ancient caves of tufa Etruscan-Roman (dating back to the first century. AC) located in the archaeological area of Prima Porta.
temperature and Moisture helps the cheese perfectly balanced to acquire a unique naturally mild aftertaste.
Seasoning is never less than 12 months and comes to 18 for the cheese matures, so that might be considered "Hard Cheese Aged", can be served at both scales (as Seal of fresh and delicious) and cheese.
The King is done in four
Pecorino Romano is not only the entire classical form with the characteristic black coating, the Brunelli group has studied several measures and sizes to offer them to all the taste comes in different sizes but all with the quality assurance PDO
