DetailsThis very young Pecorino Siciliano Sheep's-milk cheese lightly salted cured only 3 months, the curd is placed in woven straw or wire baskets, and when the whey has drained away the cheese takes on the shape and ridged imprint of the basket. This cheese is very well known in Palermo area. Available in Plain, Olives and Peppercorn variations.
