It is one of the five distinctive varieties of Pecorino (sheep???s milk)cheese that are protected by law, which received DOP (designated origin of production)status in 1996. Santa Teresa is crafted on theexotic Mediterranean isle of Sardinia. Produced to be eaten as a young cheese, the cheese is only cured for approximately 30-40days. The flavor is quite delicate and mild,reflecting the indigenous herbs and grasses that the sheep graze on.
