Years ago, Great Hill introduced a unique tasting blue cheese, the first raw milk blue in the U.S. as a matter of fact, made in its turn-of-the-century barn. This cheese is brighter than most blues with a fruity tang flavoring its creamy paste.
Great Hill Blue is an internally ripened variety made with raw, unhomogenized milk resulting in a true gourmet quality cheese. The cheese has a slightly more dense and yellow curd as no bleach or food colorings are added.
