Lentils of Castelluccio - The upland of Castelluccio lies at an altitude of 1,400 m above sea-level. It is 7 km long and is covered with meadows and flowers. A part of this area is cultivated with lentils by few old countrymen. Lentils can grow at this altitude without any difficulty. They are famous for their delicate taste, tender peel and tiny size: their diameter reaches around 2 millimeters. Castelluccio Lentils need no presoaking because of their soft skin. They retain their shape when cooked and have a wonderful, nutty, earthy flavor that is wonderful in warm, thick, winter dishes.
