This unique ricotta salata is made from lightly salted sheep's milk curd from Sardinia, Italy that is pressed, dried & coated with black truffles, then aged for a minimum of six months. The texture is drier than ricotta salata for eating, but still creamy. It has a creamy slightly salty flavor with mild sheepyness & just the right amount of Truffle. Perfect for grating into pasta!
