Choice grade beef has less marbling than Prime, but is still of very high quality. This is the most popular grade of beef because it contains sufficient marbling for taste and tenderness, while costing less than Prime, with Choice cuts being juicy enough to make that dinner of yours still delicious and amazing.
The rib-eye roast, also known as a standing rib roast, consists of the entire rib section, ribs six through twelve of the animal. A slice of standing rib roast will include portions of the so-called "eye" of the rib as well as the outer, fat-marbled muscle known as the "lip" or "cap".
