The fully ORGANIC production of this oil begins in the fields, where the olives are given rigorous phytosanitary attention. They are then picked carefully, by hand at the correct stage of ripeness, and only directly from the tree; windfalls are discarded. The selected olives are in perfect condition when they are taken into the oil mill. On the same day they are picked, the olives are stone milled.
