The selection I LEGNI is a tribute to a very important component of our production process: woods (in Italian, I LEGNI) used to make the barrels where Balsamic Vinegar of Modena matures. The wood strengthens the grape must acidification process, allows the correct maturation by the exchange between vinegar and oxygen, transmits his own essences to the product. For I LEGNI selection we wanted to enhance the features of each wood by maturing the vinegar in barrels made by that wood only. Cherry Wood: is a soft and porous wood, that allows a good manuality in barrel construction and helps the acidification of the product. It transfers to Balsamico a delicate and fruity aroma.
