Tradition and advanced technology come together on perfect harmony in this golden green oil with an intense, delicately fruity aroma and a pleasant aftertaste of sweet almond. Frantoia extra virgin olive oil comes from olive groves growing on the pleasant hillside of our wonderful land. It is made from three varieties of olives: Nocellara, Cerasuola and Biancolilla. These are the same olives that our family has been cultivating on the San Lorenzo ai Colli estate since the end of the 19th century. With this selection I sought to create the same aromas and authentic flavor that remind me so much of my childhood. The olives are picked by hand from trees and are sent to the oil press on the same day. They are pressed as gently as possible and the oil is cold-extracted from the paste by way of centrifugation. To best savor the taste of Frantoia extra virgin olive oil, drizzle it unheated over any type of fish dish, on top of fresh cheeses, vegetables, salads and bread. - Manfredi Barbera
