It is soft cheese, aged for thirty days with a milky white paste and a subtle yet pungent taste that is a result of the sheep milk from the Volterra Cliffs. It goes perfect with cold meats, beans and fresh seasonal vegetables.
Crotonese Pecorino Mannoni
Pecorino Crotonese is a specialty, semi-hard table cheese from Sardegna, Italy. Made from sheep’s milk, this cheese is formed and aged in wicker baskets, leaving a rind with a basket weave appearance. The paste is semi-firm and white in color. The truly distinctive flavor is nutty, rich and gamy, and can be described as a cross between a Parmigiano and Pecorino Romano. This cheese is delicious for eating with crackers as well as for shaving and grating on your favorite Italian dishes.
Caciocavallo Siciliano Cheese

Brigante is a sheep milk cheese from the Italian island of Sardinia. Manufactured by Fratelli Pinna, a cheese-making company located in the north of the Island, this pecorino cheese is semi-soft in texture with a pale, ivory color. Matured for about three weeks, it has a mild and creamy flavor with citrus undertones. Its texture is smooth, moist, and fairly elastic. This is a delicious table cheese that is manufactured in wheels that are approximately three pounds.
