Bowfin, are known in the caviar world for their shinny small flavorful eggs that come from the long survivors of an earlier primitive family of fish known mostly through fossils. This caviar is extremely close to the roe of the Hackleback sturgeon in both flavor and size. The adult bowfins usually reach a length of about 2 feet and weigh between 2-5 pounds. *Please note that when cooking or heating this roe, the caviar will turn red, however, the flavor remains unaffected.
