This classic/impressive Sheep’s milk cheese from Sardinia, is produced by the Master Cheese Makers from the Villecco Family. This perfectly aged “Incanestrato Style” (made in a straw basket) rind is rubbed with olive oil. The flavors can be described as rich, savory, slightly sharp (yet sweet), full flavored, rustic with a “beefy/olivey” finish. We think the flavor profile makes this cheese the perfect & best cheese available that is cured in wine!!!
