Pinna’s line of fine cheeses now includes a caciotta produced with pure Sardinian goat’s milk. This sweet, compact (700 gr.) cheese follows modern consumption trends thanks to the lightness and unique properties of goat’s milk. The typical bulged “mule’s back” circumference of Capretto Sardo recalls the traditional cheeses produced in Sardinia. Capretto Sardo is a soft, ivorywhite cheese with small holes. The crust is straw yellow, and its smooth surface is treated with a preservative (E 235).
