Tomme de Savoie is a variety of Tomme. Tomme is a name given to a family of cheese produced in the French Alps and in Switzerland. Generally all Tomme cheeses are named after the village where they are produced. This PGI certified cheese is from the Savoie region of northwestern France. This cheese is made year-round and typically has a slight different character depending on whether the cows are fed on winter hay or summer grass. The maturing takes around 2-4 months during which the cheese starts to develop a thick grey rind dotted with patches of yellow or red molding.
