These lentils are grown in the high altitude plains of Castelluccio di Norcia, a village in Umbria in the Apennine Mountains in central Italy. Their distinct size can be described as small, round, and flat and vary in color between speckled green to faded yellow to light brown. When compared to other lentils, it is very easy to see the difference. What make Castelluccio di Norcia lentils so special is the location, good climate and special soil of where the lentils are produced. Their thin skin and soft texture allows for them to be cooked without having to be soaked first.
